2 Tbs Butter

2 Tbs Flour

¼ tsp Cream of Tartar

1 cup Milk

4 egg Yolks

2 egg Whites

Melt butter in a saucepan and add flour and whisk. Beat the egg yolks and gently add half the milk mixture. Whisk continuously. If it curdles or splits you will have to start over again. Add the egg mixture into the rest of the milk mixture and mix. Beat the egg whites till fluffy. Fold in the cream of tartar and mix. Fold the whites into the milk mixture and pour into molds. Bake at 375°F for 25 minutes. Serve warm.
