3 Bell Peppers
1 lbs. Chicken Thighs or Breast
2 Tbs Cream Cheese
1/3 cup Sour Cream
1 package of Fajita Seasoning or you can use this recipe
1 package Shredded Cheddar or about 1 cup of your favorite cheese
1 bunch of Green Onions
Cut chicken into bite sized cubes and cook in a skillet (cast iron if you want a one pan meal) Slice up the bell peppers and green onions. Once the chicken is cooked through add in seasoning, cream cheese and sour cream mix well. Cover the chicken first in peppers and green onions then a layer of shredded cheese. Place this in a oven at 375°F or about 180°C cook untill cheese is fully melted and is bubbly.
