Cranberry Nut Bread

Cranberries.

When making this awesome cranberry recipe, I use gluten free flour also have learned this is one of those recipes that can for go the xanthan gum. It always comes out perfectly moist and tangy.

I do so love cranberries not only for their amazing taste but also because they are so healthy for you. Well maybe not coated in sugar, I think that cancels out to goodness factor.

These little red gems are the star of fall for me, I will also have to post one of my cranberry sauce recipes. Can’t have holiday meals with it or atleast thats how I feel.

Ingredients

1 cup Sugar

2 cups Flour

1 tsp Salt

3/4 cup Orange Juice

Zest of 1 Orange

1 Egg

1 ½ cup Cranberries, Cut in Half

½ cup Chopped Walnuts

1/3 cup Vegetable Oil

1 ½ tsp Baking Powder

Directions

Mix until barely combined. Pour batter into a greased loaf pan. Bake at 350°F for 50-60 minutes. This goes great with an orange glaze to make that you want to take; every 1 Tbs of orange juice use 2 or 3 Tbs of Powdered Sugar.

You don’t want it so thick you need a knife to spread it and you don’t want it to thin as to have is run away before it can settle into a good proper glaze.

While the glaze is still wet zest some orange over it to add that extra flavor and appetizing color appeal.
