Coconut Coated Fish

This method of breading the fish also works great with shrimp. I really enjoy the coconut flavor and usually use a bit of lime juice over it to give it a nice zing. I like to pair this with coconut rice or spicy french fries.

Ingredients

  • 2 fish fillets

  • ½ cup shredded coconut

  • ¼ cup toasted coconut flakes

  • 1 egg

  • ½ c coconut cream

  • 1 cup flour (I like to add Old Bay seasoning)

Directions

  • Dip the fish first into the egg then the seasoned flour the into the coconut cream and finally the coconut and toasted flakes bake at 200°c 15-20 mins flipping half way through.
