Chewy Sugar Cookies

Not sugar cookies but macarons
I know they are not sugar cookies.


  • 1 cup unsalted butter

  • 1 1/3 cups granulated sugar

  • 1 large egg , room temperature

  • 1 large egg yolk , room temperature

  • 2 teaspoons vanilla extract

  • 2 3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt


  • Preheat oven to 370°F or 180°C. Line large baking sheets with parchment paper or silicone baking mat.
  • In the bowl or a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand mixer, cream the sugar and butter togeter. Mix in the egg, egg yolk, and vanilla until fully combined, stopping to scrape down the sides of the bowl as needed.
  • Using a cookie scoop, scoop balls of cookie dough onto the prepared baking sheets, making sure to leave a little room between each one. Roll into balls and gently press down to slightly flatten the cookie dough.
  • Bake in batches for 8-12 minutes.
